Ingredients : |

4 unsalted butter 4 potatoes 1 cauliflower 1 c. green peas 1 c. green beans 4 tomatoes, chopped 3 onions, sliced 1 bell pepper 1 eggplant 1/2 tsp. ginger 1/2 tsp. garlic 1/2 bunch cilantro Salt to taste 3 serrano chilies Red chili powder to taste Garam masala (optional) Juice of 1 lemon Hamburger buns

| How to Prepare : |

| Cut all the vegetables in small pieces. Place potatoes, cauliflower, peas, beans, bell pepper and eggplant in a vegetable steamer and steam until tender. Saute onion in butter until lightly brown. Add ginger, garlic, green chilies, red chili powder, garam masala, salt and lemon juice. Fry for a minute and add tomatoes. Cook for another 5 minutes. Then add the steamed vegetable and mix with a spatula. Cook on low for another 10 minutes. While cooking, keep stirring in order to mash it up. Add cilantro. Buns: Put butter on buns and grill it in a skillet. For spicier taste, add lots of green chilies and garam masala.
